It's the guacamole I make for myself. Simple and so good!
For a single serving all you need is:
- 1 ripe avocado (average size... give it a little squeeze to see if it's ripe enough. If it's a bit soft then it's good to go! If it's super stiff, let it out on the counter top overnight to ripen some more).
- 1 small green onion or 1/4 white onion, minced
- the juice of 1/2 a lime
- 1 clove garlic, crushed/pressed
- pinch of salt
- pinch of cayenne pepper for a little kick
Cut the avocado in half, if it's the right ripeness the seed in the middle should slide right out. Scoop out the yummy insides with a fork and gently puree it in a bowl with the fork. Add in the onions, garlic, salt, lime and cayenne and mix away.
Layer on a slice of bread *homemade bread, lightly toasted - for me* or 2, depending on your preference. I like to just pile it on a single slice.

Absolutely love this! Avos aren't always reliable here in the UK but when I find good ones I live off them for weeks! Cayenne pepper is such a nice touch, can't wait to try this out!
